This wine will age well for a decade and beyond. We recommend decanting in its youth.
Profile is our flagship red Bordeaux blend showcasing the very best fruit from each vintage. The Cabernet Sauvignon comes from our St. Helena Estate Vineyard that was planted under the direction of Michel Rolland ten years ago, and under the farming direction of David Abreu the now mature vineyard is giving us some of the most complex and concentrated fruit in the Napa Valley. Our favorite lots of Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc are chosen for their concentration, depth of flavor and fine tannin structure to produce a wine that is rich, elegant and opulent. After undergoing extended maceration and a cold ferment, we age Profile for 22 months in 90% new French Oak barrels.
The 2007 vintage was one of the best in recent memory. After a normal bud break, the valley experienced mild weather through the growing season with a slightly cooler summer and warm September. This climate resulted in slow, even ripening with a crop just slightly smaller than normal, and the highly desired small berry size. Winemakers across the valley are very excited about the 2007 vintage.
Plush aromas of cassis, black cherry, perfume and vanilla are interwoven with tobacco, cedar and cocoa. On the palate the wine is dense and concentrated with a finish that is long and complex.
