Sourced mostly from the cooler, southern part of the Napa Valley, the fruit was hand-picked and triple-sorted before undergoing extended maceration and a long, cool fermentation for increased flavor and color. The wine was aged for 21 months in 60% new French oak and minimally racked before being bottled unfined and unfiltered.
The 2007 vintage was one of the best in recent memory. After a normal bud break, the valley experienced mild weather through the growing season with a slightly cooler summer and warm September. This climate resulted in slow, even ripening with a crop just slightly smaller than normal, and the highly desired small berry size. Winemakers across the valley are very excited about the 2007 vintage.
Our 2007 Napa Valley Merlot shows aromas of plum and brambly blackberry along with vanilla, dark chocolate, baking spices and roasted sage. The mouthfeel is broad and lingering into the finish.
Our favorite pairings include homemade pasta with a boar or veal ragú and very sharp cheeses.
